Mulled Wine with Pear Cider

While the holidays may be coming to a close there are still plenty of cold, winter days that need a comforting hot toddy. This mulled wine is a great option for a warm cocktail and can be made in large batches for a dinner party.  When I served it to some friends we started referring to it as “Christmas in a cup”. Maybe “winter in a cup” would be more accurate.  If you have 10 minutes this will fit in your plans and will give comfort on the coldest of nights.  Cheers!

** Tip – choose a pear juice that doesn’t have added sugar. Just the juice is needed.

Ingredients
  1. 6 corn on cob
  2. 3/4 cup Manchego cheese, shredded
Sauce
  1. 2 cups fresh cilantro {stems ok}
  2. 4 garlic cloves
  3. 1/2 cup grapeseed oil {or other oil you have}
  4. 1 medium lime, chopped
  5. 1/4 tsp. salt
  6. 1 T. cumin
  7. 1 tsp. paprika
Instructions
  1. Preheat grill to medium temp. Blend sauce ingredients in a small blender or food processor. Brush each ear of corn with sauce on all sides and place on grill. Rotate corn while it's cooking with total cook time around 8 min. You want charring, but not full burning. Once cooked move to a plate and brush with a thin layer of remaining sauce. Finally, top each ear with the shredded Manchego cheese. Devour.
